In Zusammenarbeit mit der lokalen Imkerei Kellers aus Hechendorf, wurde ein neuer Whisky Liqueur „Bavarian Single Malt meets Local Forest Honey“ kreiert. Ziel war es, einen Whisky Liqueur mit einem natürlichen und regionalen Produkt herzustellen, der den Namen Whisky im Geschmack widerspiegelt. Hierzu wurde einen Single Malt aus einem Oloroso Fass mit Waldhonig vermischt, der die Mindestanforderung von 100 Gramm Zucker pro Liter vorweisen kann. Beide Komponenten (Whisky / Waldhonig) sind gut zu schmecken und haben die richtige Ausgewogenheit.
Geschichte: Erste Whiskybrennerei im Landkreis Starnberg. Nach einem Herrenausflug in die Highlands (Schottland) 2017, und der Änderung des Brennrechts, wurde der Entschluss gefasst, den 1sten Whisky im Hochland (641 Meter) des Fünfseenlands zu produzieren. Der erste bayerische Single Malt Whisky - HeiligenBergFeld - ist am 26.02.2018 in den Fässern gelagert worden. Die neue Verschlussbrennerei wurde am 16.12.2020 vom Zollamt abgenommen, und die Produktion läuft nun auf Hochtouren.
Handarbeit: Es wird sehr viel Wert auf Handarbeit bei der Produktion gelegt, dies fängt bei der Würze an und endet bei der Abfüllung. Bayerisches Malz, Reines Wasser geprägt durch die Seenlandschaft im Alpenvorland, Hefe aus einer nah gelegenen Brauerei.
Brennvorgang: Ein schonender Brennvorgang rundet den White Dog ab, damit ein unverwechselbarer Single Malt Whisky entsteht.
Fässer: Der Whisky wird nur in ausgesuchten First-Fill Fässern gelagert. Es wird Wert gelegt auf eine lange Vorbelegungszeit mit herausragenden Aromen wie z.B. Sherry Oloroso - PX, Amontiallado, Palo Cortado, Portwein, Madeira, Marsala, Banyuls, Moscatel, Rum....Ausgesucht von Fasslieferanten Oakbarrels.shop, der Partner von Casknolia ist, oder der Tonelerìa Juan Pino.
